Fake your way to buttermilk!
I'd heard many times before that if you don't have buttermilk, that you can add 1 tablespoon of vinegar to milk and it will work out just the same. I thought, "Well, in theory, that means I could use my lactose-free milk and vinegar, and then I'd be able to make things with buttermilk that I couldn't have before."
I hadn't tried it until tonight. Granted, it wasn't a recipe as buttermilk-specific as buttermilk pancakes, but the recipe did call for a cup of it-- I made this Cinnamon Bread using 1 cup of lactose-free skim milk + 1 tbsp. of vinegar and it came out great.
So go forth and try!

It also works well with soy, rice, and almond milk. I've also used lemon juice before with the same good results. This was a life saver for me even when I could drink regular milk because buttermilk is not something I usually have around the house and I always hated to buy a big thing of it when I only needed about a cup.
