Sara is no medical expert by any means, but she has been battling with dairy since 1999. Frustrated by the fact that dairy seems to be in everything, she took to cooking in order to make friendly versions of meals that she normally could not have. In the process, she's learned a lot about substitutions and the power of lactaid. She wanted to create a page about lactose intolerance that was relatable, not textbook. This page is here to share some knowledge, or at least to let you know that you're not the only one experiencing the digestive inferno. Lactose Intolerance: A condition where the body does not produce the enzyme lactase, which is responsible for breaking down the sugar known as lactose. It is not an allergy. Since the body does not know how to digest lactose, as far as your stomach is concerned, you could just be eating a pile of rocks. Tasty, huh?
